Skillet Eggs in Fresh Tomato Sauce

Summer is gone and Fall is here, although I still have some beef steak tomatoes growing in my garden. I thought I would put them to good use by making a special egg dish that my mother makes for dinner, yes that’s right dinner! I love breakfast for dinner , however this egg recipe feels more like a dinner then something you would eat at breakfast. I know I’m confusing you! It’s truly delicious, low carb, and once you make it, I promise you will make is again and again. My fresh garden tomatoes really made this dish pop with flavor, and of course a little cheese makes everything taste good!

Ingredients

2-3 tablespoons olive oil
1 small red onion, sliced thin
2 cloves fresh garlic, chopped
3 large garden steak tomatoes, chopped
1 tsp garlic powder
salt & pepper to taste
1 tbsp Parmesan cheese
6 eggs
fresh basil
extra Parmesan cheese for sprinkling

Directions

In a large pan add olive oil, red onion, and fresh garlic. Cook on medium low until onions are softened. Add chopped tomatoes, garlic powder, salt, pepper, and parmesan cheese. Cook until tomatoes are broken down, and turning into a thick sauce. Lastly crack your 6 eggs right on top of your tomatoes and cover on low until eggs are done. Cooking time can vary. If you like your eggs softer, cook for less time. If you prefer your eggs completely cooked and harder, keep the lid on until you achieve that. It only takes a few minutes, so keep an eye out. Once your eggs are to your liking, top with some fresh basil and more Parmesan cheese! This egg dish pairs well with a savory waffle, some good bread, or even a side of rice. Enjoy! Serves 3.

Sesame Chicken With Brown Rice

Felt like sesame chicken tonight, but to be honest there aren’t any Chinese restaurants by my house that I absolutely have been impressed with. Then I thought, it’s easy, much cheaper, and much healthier to make my own sesame chicken right at home. I love Asian flavors, they are the perfect blend of sweet and savory, and that’s exactly how I like my sesame chicken. I did some researching online and found an easy, quick recipe from Marcus Samuelson. I’ve seen him a lot on Food Network, so how bad can the recipe be. I did lessen the amount of some ingredients, but will leave the original link to his recipe below. With my sesame chicken I will make some healthy brown rice as a bed for my chicken, and dinner will be set. Feel free to make a green salad or healthy side dish like my french green beans with olive oil, parmesan and cashews to go along with your sesame chicken and brown rice!

Ingredients

6 boneless, skinless chicken breast halves
1 teaspoon olive oil
1/4 cup honey
1/4 cup soy sauce
1 cup water
1 tablespoons cornstarch
1 teaspoon fresh, ground ginger
2 garlic cloves, minced
1 tablespoon toasted sesame seeds

Brown Rice

1 teaspoon olive oil
1 cup brown rice
2 cups water
1 clove garlic minced
salt to taste

Directions For Brown Rice

In a large pan add olive oil, and garlic. Next add your rinsed brown rice and water. Add a dash of salt. Cover with a lid and let come to a boil. Once it does, cook on low to simmer at least 20-25 minutes until light and fluffy.

Directions

Cut your cleaned chicken breasts into bite size pieces. Heat large non-stick skillet over medium-high heat, add one teaspoon olive oil. Add chicken and cook for about 6-8 minutes, until each piece is thoroughly cooked through (no longer pink). As the chicken is cooking, mix honey, soy sauce, water, cornstarch, ginger, and garlic. Whisk until there are no cornstarch lumps. Pour sauce into skillet with chicken and cook until sauce thickens slightly. Sprinkle with sesame seeds, cover and simmer for 10 minutes or until chicken starts soaking up the sauce.

To put it altogether, place a scoop of brown rice on your plate, and top with delicious sesame chicken. Sprinkle with fresh cilantro if you like. Enjoy!

Pecan Feta Green Salad With Lemon Garlic Dressing

I have chosen to make something a little more healthier as I’ve been baking a lot this holiday season. I love salads that have a lot of flavor and crunch, so I always add some sort of nut like pecans or almonds as a topping. The addition of cheese always makes a salad even tastier! This pecan feta green salad is comparable to a Greek salad minus a few ingredients. The amount you make is up to you, but my recipe serves one. That’s me!

Ingredients

4 cups chopped romaine lettuce

1 medium tomato

1/2 chopped cucumber

1/4 cup reduced fat feta

1/4 cup pecans

1/4 cup lemon juice

2-3 tablespoons olive oil

salt and pepper

1 garlic clove minced

Directions

Rinse your romaine lettuce in a salad spinner or colander. Chop your tomato and cucumber and all three to a large mixing bowl. Sprinkle with pecans, and feta cheese.  Drizzle as much as you like of your lemon garlic dressing.  Toss well, and place in a salad bowl. It’s as easy as that! Enjoy!

Lemon Garlic Dressing

Mince your garlic by hand on a cutting board, or use a garlic press. Add to a small bowl. Next add your lemon juice, olive oil, salt and pepper. Taste your dressing. If you need more salt, add it. You may also want more lemon, or garlic. Stir well, and add to salad.

Some other ingredients you may add:

red onion

avocado

dried cranberries

fresh fruit

pumpkin seeds

your favorite dressing

tuna, chicken, or fish

different cheese

croutons

Replace mashed potatoes tonight with creamy cauliflower!

I wanted the creaminess of mashed potatoes but wanted something not so starchy, so I made this easy creamy cauliflower. It’s delicious and gives you the effect of mashed potatoes without too much guilt! Enjoy!

What you’ll need :

1 large Cauliflower head

2 tablespoons olive oil

2 cloves of garlic, more if you wish

2 tablespoons butter, again use more if you like

water

4 ounces low fat cream cheese

1-2 tablespoons parmesan cheese

salt and pepper to taste

garlic powder

dried parsley flakes

Start by rinsing your cauliflower in cool water and cut into small pieces. Next in a large pot add your olive oil, garlic, and butter. Sautee for a minute. Don’t let the garlic burn, or it will become bitter. Add your fresh cauliflower and toss to coat. Add about 1/4 cup of water and cover to steam cook. If you need more water, just add to the pot when cooking. Once cooked through, you may then add the salt, pepper, garlic powder, cream cheese and parmesan. At this time you may begin to mash with a handheld masher or use a blender to make really creamy. I like mine a little chunkier in texture, so I used my handheld. Taste your cauliflower! You may need more seasonings, just don’t eat all of it, because it’s delish! Serve in a pretty dish with a dab of butter and sprinkle on some dried parsley, fresh if you like. Enjoy!
